- 2 1/2 cups sugar
- 1 8-oz. pkg. fat-free cream cheese, softened
- 1/2 cup applesauce
- 1 cup egg substitute
- 1 16-oz. can pumpkin
- 3 1/2 cups flour
- 2 tbsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1/2 cup chopped nuts
Combine sugar, cream cheese and applesauce, mixing at medium speed on electric mixer until well blended. Add egg substitute, 1/4 cup at a time, mixing well after each addition. Blend in pumpkin. Add combined dry ingredients, mixing just until moistened. Fold in nuts. Pour into two greased and floured 9x5-inch loaf pans. Bake at 350 F, 1 hour or until wooden pick inserted in center comes out clean. Cool 5 minutes; remove from pans.
Yield: 2 loaves ( 8 slices per loaf) |
