- 1 cup wheat bran cereal (not flaked)
- 1/2 cup undiluted carnation evaporated skim milk
- 1/4 cups all-purpose flour
- 2/3 cup sugar
- 1 tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1 cup solid packed pumpkin
- 1/2 cup applesauce
- 1/4 cup egg substitute or 2 egg whites
- 1/2 cup raisins
- 3 tbsp. cinnamon-sugar
In a medium bowl, combine cereal and milk. Let stand 10 minutes or until milk is absorbed. In large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg and cloves; set aside. Add pumpkin, applesauce, egg substitute and raisins to cereal. Add liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into greased or paper-lined 2 1/2-inch muffin cups, filling to top. Sprinkle each muffin with 1 teaspoon cinnamon-sugar. Bake in preheated 400 F oven for 25-30 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 3 to 4 minutes. Remove from pan; cool on wire rack.
