- 1 cup broccoli flowerettes
- 16 ounces egg substitute( equivalent of 8 eggs)
- 1/2 cup sliced mushrooms
- 1/2 cup red bell pepper, cut into rings
- 1/2 cup 1% milkfat cottage cheese
- 2 green onions, cut into 1-inch pieces
- 2 tbsp. Dijon mustard
- Non-stick vegetable cooking spray
- 1/2 tsp. Italian seasoning
Spray a 10-inch ovenproof skillet with vegetable spray. Over medium-high heat, cook and stir broccoli, mushrooms, red pepper, and green onions until tender-crisp, about 3 minutes. Remove from heat. In a large bowl, with electric mixer at medium speed, beat egg substitutes, cottage cheese, mustard, and seasoning until foamy, about 3 minutes. Pour into skillet over vegetables. Bake at 375 F for 20 to 25 minutes or until set. Serve immediately.Yield: 6 servings
