- 1 3/4 cups plus 2 tbsp. all-purpose flour
- 1/2 cup sugar
- 2 tbsp. baking powder
- 1/4 cup egg substitute or 2 egg whites
- 3/4 cup 1% or skim milk
- 1 cup applesauce
- 1 cup fresh cranberries, coarsely chopped
- 1/2 tsp. cinnamon
In medium bowl, combine 1 3/4 cups flour, 1/4 cup sugar, and baking powder. In small bowl, combine egg substitute, milk and applesauce; mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with remaining 2 tbsp. flour; fold into batter. Prepare 12 cup muffin tin by spraying with non-stick cooking spray. spoon batter into muffin cups. In another small bowl, combine remaining 1/4 cup sugar and cinnamon. Sprinkle over muffins. Bake in preheated 400 F oven 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack.
