Any white fish, such as red snapper, grouper, or orange roughy, can be substituted in this recipe.
- 2 cups coarsely chopped tomato
- 1 small garlic clove, crushed
- 1/4 teaspoon salt
- 6 (6-ounce) bluefish fillets
- 3 tablespoons red wine vinegar
- Vegetable Cooking Spray
- 2 tablespoons fresh chopped cilantro
- 2 teaspoons grated lemon rind
- 1 tablespoon minced shallot
- 1/2 teaspoon Mrs. Dash
- 1 tablespoon olive oil
- lemon pepper salt-free seasoning
Place tomato in a colander; sprinkle with 1/4 teaspoon salt, and toss gently.Let drain for 30 minutes.Combine tomato, vinegar, cilantro, shallot, olive oil, and garlic in a medium bowl, and stir well. Let tomato mixture stand at room temperature 30 minutes.Place fish in a jelly-roll pan coated with cooking spray, and sprinkle with lemon rind, lemon-pepper seasoning. Broil 8 minutes or until fish flakes easily when tested with a fork. Serve with tomato coulis.Yield: 6 servings
