  • 2 cups all-purpose flour
  • 3/4 cup mashed very ripe banana (3 bananas)
  • 1 tbsp. baking powder
  • 1/3 cup honey or 1/4 cup granulated sugar
  • 1/4 tsp. salt
  • 1 tsp. grated orange zest
  • 2 egg whites or 1/4 cup egg substitute
  • 1 tbsp. granulated sugar
  • 1/2 cup undiluted fat-free evaporated skim milk

In large bowl, combine flour, baking powder and salt; set aside. In a small mixer bowl, slightly beat egg whites or egg substitute. Add evaporated milk, banana, honey, and orange zest; beta until blended. Add liquid ingredients to dry ingredients; stir just until moistened. Mixture will be lumpy. Spoon batter into 12 greased or paper-lined 2 1/2-inch muffin cups. Sprinkle tops with sugar. Bake in preheated 400 F oven 13 to 15 minutes or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack.Yield: 12 muffins
